Rajgira Puri Recipe

Ingredients

  • 1/2 Cup Amaranth Flour Rajgira
  • 1/2 Tsp butter Clarified
  • 1 Tbsp Coriander Finely chopped
  • Rock Salt to Taste

Instructions

  • Place steel utensil on the flame and add water. Once the water is lukewarm turn off the flame.
  • In a mixing bowl add Rajgira/ Amaranth flour, rock salt to taste, chopped coriander and half tsp clarified butter. Mix these ingredients well.
  • Now add lukewarm water accordingly to the mixture and knead it into a semi-soft dough.
  • Pour a little oil or ghee and kneed just to make the dough smooth.
  • Now divide the dough into the small balls (size can depend on your choice).
  • Place a plastic bag on chakla or you can also opt for a butter paper and grease it oil evenly.
  • Place ball in between your palms, flatten it.
  • Place it on the butter paper, cover it with the other half and with a help of rolling pin gently flatten it outwards.
  • Prepare other Puri similarly.
  • In a deep bottomed pan heat oil.
  • Once the oil is hot, slid the Puri carefully into the hot oil.
  • Fry until light golden from both the sides and repeat the same for rest.
  • Take them out on a kitchen towel lined plate and serve hot.
