Place steel utensil on the flame and add water. Once the water is lukewarm turn off the flame.
In a mixing bowl add Rajgira/ Amaranth flour, rock salt to taste, chopped coriander and half tsp clarified butter. Mix these ingredients well.
Now add lukewarm water accordingly to the mixture and knead it into a semi-soft dough.
Pour a little oil or ghee and kneed just to make the dough smooth.
Now divide the dough into the small balls (size can depend on your choice).
Place a plastic bag on chakla or you can also opt for a butter paper and grease it oil evenly.
Place ball in between your palms, flatten it.
Place it on the butter paper, cover it with the other half and with a help of rolling pin gently flatten it outwards.
Prepare other Puri similarly.
In a deep bottomed pan heat oil.
Once the oil is hot, slid the Puri carefully into the hot oil.
Fry until light golden from both the sides and repeat the same for rest.
Take them out on a kitchen towel lined plate and serve hot.
